Rosa's interest in preserving women's history was sparked by the story of her grandmother, who was a Harvey Girl in New Mexico. This led her to write a series of books on Harvey Houses, including Harvey Houses of Texas, Harvey Houses of New Mexico, Harvey Houses of Kansas, and Harvey Houses of Arizona - all published by The History Press. Her book, Harvey Houses of Kansas, received the Notable Kansas Book Award in 2016.

My “Harvey House” books focus on the personal experiences of thousands of young women who worked as Harvey Girls. I realized that this significant part of women's history in the United States is relatively unknown. Many of these women had never traveled further than walking distance from their homes, yet they courageously answered the call to go to the uncivilized West to work in the precursor of the restaurant chain - Harvey Houses.

"This book is terrific - well-organized and a fine piece of writing, plus outstanding photos. The author brings Harvey Houses back to life - I wanted to order breakfast amid a busy crowd of fellow rail travelers!” - Texas State Historian Bill O'Neal
